Baked Oatmeal

I needed to use up some dried cranberries so I started looking at for baked oatmeal recipes- I thought it would be a nice breakfast on a cold winter day. With a few modifications, here's what I came up with...enjoy!

3 c. oats
1/2 c. brown sugar (add up to 1 cup if you prefer yours to be really sweet)
2 t. cinnamon
2 t. baking powder
1 t. salt
1 c. milk (soy milk works just as well)
2 eggs
1/2 c. melted butter
2 t. vanilla
3/4 c. cranberries
1/4 c. pecan pieces

Preheat oven to 350 degrees.

Mix oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla. Spread in a lightly greased 13 x 9 pan. Bake for 30 minutes.

It turns out slightly crumbly so feel free to mess with the baking time if you'd like a more moist version. Or just serve with milk! Your home will smell delicious as it bakes.
